Ingredients for Chocolate Mint Cake
For the Cake:
2 cups of all-purpose flour
1 3/4 cups of granulated sugar
3/4 cup of unsweetened cocoa powder
1 1/2 teaspoons of baking powder
1 1/2 teaspoons of baking soda
1 teaspoon of salt
2 large eggs
1 cup of whole milk
1/2 cup of vegetable oil
2 teaspoons of vanilla extract
1 cup of boiling water
For the Mint Frosting:
1 cup of unsalted butter (softened)
3 cups of powdered sugar
2-3 tablespoons of heavy cream
1 teaspoon of mint extract
Green food colouring (optional)
For the Chocolate Ganache:
1 cup of semi-sweet chocolate chips
1/2 cup of heavy cream
Step-by-Step Guide
Step 1: Prepare the Cake Batter
Set your camp! Preheat your oven to 350°F (175°C) so that your cake will be baked in a no-damage zone.
Take two cake pans of around 9 inches and grease them with oil or butter.
Take a mixing bowl; it should be large enough to hold the dry ingredients and allow them to be mixed properly. Add the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Take another mixing bowl! In this bowl, add your eggs, milk, vegetable oil, and vanilla extract.
Carefully and gradually combine your wet ingredients with the dry ingredients.
Once mixed, start slowly pouring some boiling water into the mixture until it feels smooth.
Step 2: Bake the Cake
Now, divide your batter equally into both of the pre-greased cake pans.
Bake both for approximately 30-35 minutes. (To check if they're fully baked, prick a toothpick into the cake). If the centre comes out clean, it is done!)
Cool both of the pans for 10-15 minutes, then transfer them to a wire rack to cool completely.
Step 3: Whip Up the Mint Frosting
It’s getting exciting! You can begin preparing your mint dessert frosting while your cakes cool on the racks.
Take a large mixing bowl, add your softened butter, and beat it until you reach a creamy texture.
In your butter, start gradually adding powdered sugar (one cup at a time), alternating with the heavy cream to achieve the desired consistency.
Add one teaspoon of mint extract to the mixture, and if you want your cake to have that signature minty look, you can also add a few drops of green food colouring.
(we will be using real mint by the end of this recipe; however, for the frosting, the extract is a good mint substitute.)
Step 4: Make the Chocolate Ganache
Here comes the game changer - let’s create a chocolate ganache!
Heat your heavy cream in a small saucepan; just when it starts to simmer, you can turn off the heat.
To make the perfect mint chocolate chip cake, pour your hot cream into a bowl of chocolate chips and let it sit for 2-3 minutes.
Once the cream and chocolate chips are melted, stir until it becomes smooth and glossy.
Let the ganache cool a bit before you use it for assembling.
Step 5: Assemble the Cake
Place one cake layer on your serving plate.
Spread a generous layer of mint frosting over the top.
Now place your second layer of the cake, and carefully do your frosting over the top and sides.
Drizzle the slightly cooled chocolate ganache over the cake, letting it cascade down the sides for a dramatic effect.
For a fun decorative touch, you can top the cake with mint leaves, chocolate curls, or crushed candy canes during the holidays.
